Echo’s Pizza (3200 Banks St., 504-267-3231) is now open in Mid-City. The new restaurant from the team behind 1000 Figs and baker Kate Heller officially opened on Wednesday on the corner of Banks and S. Lopez streets, following a brief soft-opening period.

The building has been vacant for the better part of the past year while the owners worked on a complete remodel of the space. There is a counter and a small dining room in front and a larger dining space past past a wood-burning oven, as well as a back patio.

Theresa Galli and Gavin Cady, of Faubourg St. John Mediterranean restaurant 1000 Figs (and the Fat Falafel food truck), teamed up with Heller, of Leo’s Breads, after selling Heller’s breads at their restaurant.

The restaurant’s focus is on Heller’s skills with the wood-burning pizza oven, There are eight pies on the opening menu, ranging from a traditional margherita topped with tomatoes, fresh mozzarella, basil and Grana cheese, to a pork sausage pie topped with braised greens, cream, Grana, fermented chilies and garlic. A mushroom pizza is topped with shiitake, oyster and cremini mushrooms, Fontina and Pecorino cheeses and thyme. Chorizo tops a pie with tomatoes, fresh mozzarella and oil-cured olives.

Heller also bakes sourdough and semolina bread, which are available as whole loaves and used in some dishes. Small plates include cheese and charcuterie spreads, pickled carrots, seared squid and greens crostini, dandelion greens and yogurt, and anchovies served with bread and butter. A small selection of fritti — fried suppli, zucchini, and oysters — a few salads, and a couple larger dishes — roasted chicken, and a shrimp and corn couscous on opening night — round out the menu.

The restaurant opens at 4 p.m. Wednesday through Monday. It is open until 10 p.m. most nights, and 11 p.m. Fridays and Saturdays. The owners plan to add lunch service.
