Ca. 1718, named for the year the city of New Orleans was founded by the French, will open in January 2018 and serve bar food, Araujo says.
As part of the Araujo Restaurant Group, the chef also runs the Honduran pop-up Alma, and Saveur Catering.
The new spot will be casual but focus on higher-quality bar food items, Araujo says. Menu items include snacks such as boudin-filled beignets, pimiento cheese sliders and cracklings. A selection of tacos include the Puebla, filled with poblano peppers, mushrooms and a cilantro yogurt sauce, an adobo pulled pork taco with cumin-pickled onions, and a Baja-style beer-battered fish taco topped with a creamy jalapeno sauce and pickled slaw.
Larger dishes include a chicken schnitzel sandwich on sesame challah with harissa mayonnaise and pickles, a Carolina-style barbecued pork sandwich, and a wagyu beef burger topped with Gorgonzola, smoked Gouda, caramelized mushrooms, black garlic and garlic aioli served with truffle fries.
Araujo says the menu will change with the seasons. A cocktail and drink menu is being developed.
Also in the works, Araujo will do a temporary pop-up residency at Central City’s Roux Carre starting in January, while the team competes for a regular spot at the Oretha Castle Haley food lot.
