I never dreamed that Yellowtail would ever be featured in this space. But I always preach "drink blind," and this spotlight is the result of a blind tasting of several of Wine Spectator's 2007 Top 100 that made believers out of an unknowing, possibly skeptical group of tasters. The list noted the 2005 vintage, and the current vintage is a continuation of that highly touted style. In the glass, the wine is highly aromatic, releasing bouquets of ripe, dark fruits and chocolate with peppery nuances, followed by bold flavors of blackberry, cherry, plum, mocha and spice with solid tannins and some alcohol on the backside. Decant it for best results. Drink it with chargrilled beef, duck confit, roast venison and barbecue.
