For maximum enjoyment of traditional Thanksgiving fare with all the usual accompaniments, or even an off-the-wall repast, consider this Italian gem from Trentino with its dry, subtle red-fruit favors and bubbly, go-with-any-dish character. A blend of 60 percent Pinot Noir and 40 percent Chardonnay made by the classical method, this salmon-hued wine offers floral bouquets, hints of currants and wild strawberry aromas followed by faint raspberry and white peach flavors with a smattering of almonds on the finish. Soft and elegant, with low acidity, drink it now as a delightful aperitif or lovely complement to hors d'oeuvres, seafood, fowl and a variety of light, spicy, fried or fruity dishes.
