The number of wineries in Washington state has increased 400 percent in the last decade and the state is second to California in wine production. Christopher Michael Wines, a collaboration between two brothers, was founded in 2009, and its first release of cabernet sauvignon drew critical acclaim. This cabernet is vinified using small open-top fermenters, and the wine is aged 18 months in French oak barrels. It offers aromas of black raspberry, dark cherry, anise and espresso. On the palate, taste black fruit, cassis, cocoa, toast and lingering sweet tannins. Decant 30 minutes before serving. Drink it with steak, braised beef short ribs, wild game and aged cheeses.
