Last summer, Ritz-Carlton executive chef Matt Murphy was in an intensive care unit, fighting for his life against a rare blood condition. Now, he's at the helm of a new restaurant the hotel has named in his honor, M Bistro (921 Canal St., 524-1331; www.ritzcarlton.com), which replaces Melange. It features Murphy's original dishes and interpretations of Gulf standards. Look for blackened redfish, shrimp and grits, and braised rabbit lasagna with wild mushrooms and goat cheese. At lunch, there's red bean vegetarian pie and shrimp po-boys with green tomato chutney.
