Cava is Spain's answer to American sparkling wine and similar beverages popular in France and Italy. These twice-fermented wines are made exclusively in Penedes in the Catalonia region. The backdrop is the Costa Brava, which boasts breathtaking views of the Mediterranean Sea and yearround sunshine. Juve y Camps is a family winery founded in 1921, and its 2,700 acres of vineyards specialize in Spanish grapes such as paralleda, macabeo, and xarel-lo. This bottling, however, is all pinot noir from a newly acquired vineyard. It is produced using the methode traditionelle. Minimum pressure from the press, a cold-soak maceration process and fermentation in stainless steel yield a delicate and elegant bouquet with notes of strawberry, toasted almonds and pleasant minerality.
