Sauvignon blanc grapes adapt easily and reflect many different viticultural environments. They also ripen early and thrive in cool, dry, sunny climates. The varietal's naturally high acidity permits the wine to retain its freshness whether it's made in France's Loire Valley, South Africa, New Zealand or California. Grapes for this bottling from Helen and Charles Mara were sourced from four appellations in Sonoma County, each with distinct soils and microclimates. The wine was cold fermented in stainless steel to retain its freshness and distinctive qualities. In the glass, it offers aromas of green apple, melon and pear. On the palate, taste grapefruit, lime zest, notes of peach and apricot and an enticing minerality. Drink it with pickled vegetables, raw oysters with mignonette sauce, shellfish, risotto, lobster tacos, poached white fish with beurre blanc, Asian dishes and spicy dishes.
