. Dinner Lab members attending the event and a team of judges will vote for the winner. The winning recipe will be used at crawfish boils in 10 other Dinner Lab cities.
For the competition, Dinner Lab supplies crawfish and a stipend to cover other ingredients. Teams must supply their own boiling rigs.
Dinner Lab was started in New Orleans in 2011 as a members-only dining club that hosts pop-up dinners, generally at non-restaurant locations. Members find out the location of the event 24 hours before the event. Dinner Lab currently operates in 31 cities, and there are now two tiers of membership. General membership if free and members can buy tickets for non-members to attend events. There also are paid Select Memberships, and those members get the first chance to buy tickets plus discounts on events.
