New Orleans' 3 Potato 4 Space Station (2727 S. Broad St., Suite 102, 504-298-7761; www.facebook.com/3p4neworleans), an organic, vegan, gluten-free restaurant specializing in baked potato wedges with homemade sauces and sea salts, is now open. Patrons order fries from the 1950s sci-fi-themed eatery cafeteria-style, choosing a potato variety (russet, redskin or sweet), a size (snack, hungry or share), a sauce (there are more than 20 sauces including curry ketchup, chipotle mayo and Thai chili sauce) and an extra (vegan bacon bits, malt vinegar, Sriracha sauce or Kryto Ketchup).
3 Potato 4 also offers Aztec chili, chipotle-sweet potato soup, frozen vegan chocolate-dipped bananas called Banana Rockets, Zevia sodas, coconut water, kombucha and other vegan drinks. The Salem, Mass.-based franchise uses only biodegradable or recyclable packaging. According to the company's website, the goal of 3 Potato 4 is to "reintroduce the potato for its merits as an antioxidant, a mega-doser of vitamin A, [with] more potassium than a banana and 37 percent of your daily vitamin C."
