Dominique’s on Magazine was racking up a great deal of positive press during its first year in business, though the news on the place reported by the Times-Picayune back in August threw things for quite the loop.
Dominique Maquet was to leave his namesake restaurant to start a new restaurant, using the same name, just a few blocks down the street. Maquet stayed on until earlier this month, but even while he was still there one had to wonder what would become of Dominique’s on Magazine once he was gone.
The answer, announced this week, is Apolline, a new restaurant in the same space with chef Matthew Farmer now running the kitchen. Apolline is scheduled to open Tuesday, Nov. 22, and will serve dinner Tuesdays through Saturdays.
Manager Jenny Smith explains that the menu will be contemporary Creole, as before, with a mix of seafood and meat dishes. The menu has not yet been updated on Apolline’s Web site, but Smith says some highlights include drum with a paella-style risotto, seared scallops with corn and lima bean succotash and a smoked crab salad with aioli.
“Matt is from Louisiana and he loves cooking with local ingredients, so there’s a lot of local seafood and local produce,” she says.
Farmer was previously sous chef at Salu, a tapas restaurant on Magazine Street.
Dominique’s on Magazine was noted for its cocktail menu, and Smith says a new drinks list will be unveiled for Apolline too.
Some of the dishes from Dominique’s on Magazine remain on the new Apolline menu, notably a popular appetizer of sweetbreads with chimichurri.
“That was a dish that just had to says,” Smith says.
Meanwhile, Maquet is working on two restaurant concepts, the new Dominique’s on Magazine, slated to open in the spring at 4215 Magazine St., and Tamarind by Dominique, scheduled to open before the end of the year inside the newly redeveloped Hotel Modern on Lee Circle.
