There are only a few restaurants in the area serving dim sum, the Chinese teahouse style of dining with all its fried rolls, baskets of steamed dumplings and other small dishes.
The leisurely, shared format is such an engaging style of dining -- and when done right the food is so delicious -- that it's a real shame the local specialists like Royal China in Metairie and Three Happiness in Gretna don't have more company.
This Thursday, though, local chef Dan Esses will give a class at Savvy Gourmet for those who want to add their own home kitchen to the short roster of dim sum purveyors and gain the skills to perhaps host their own dim sum party.
Esses has cooked at a wide range of local restaurants, most recently Marigny Brasserie. He's a New York native and his work back home has included a tour of duty with the dim sum chef at Buddakan NYC, a huge contemporary Chinese restaurant in Manhattan.
At Savvy Gourmet this Thursday Esses will demonstrate classic dim sum recipes as well as more contemporary versions, so look for dishes like pork pot stickers, crawfish egg rolls, scallion pancakes, barbecue pork bao buns, shrimp hargow and crab and shrimp siu mai, plus various dipping sauces.
The class begins at 6:30 p.m. and costs $75.
