Penedes, Spain / $13-$15 Retail

A particularly well-crafted Spanish sparkling wine, this cava is sure to surprise and delight holiday partygoers. Made from 70 percent Chardonnay, which adds great character, and 30 percent Parellada, a Catalonian white grape, the wine was produced in the traditional method and bottle-aged a minimum of nine months before release. The wine's creamy texture is evocative of stylish French Cremant sparklers. In the glass, delicate floral, grapefruit and lime-zest aromas erupt among the persistent bubbles followed by biscuit, citrus and apple notes on the palate. Enjoy this delightful bubbly on its own or with tapas, seafood, light meats and soft cheeses such as Pont l'Eveque, Camembert and Robiola. Buy it at: W.I.N.O. and Dorignac's. Drink it at: Orleans Grapevine Wine Bar & Bistro, Bridge Lounge, Santa Fe and Sante Fe Tapas. — Brenda Maitland
